😳 *WHY?* ❓❓
*Why do onions make us cry?*
When we cut an onion, we break open its cells and release sulphur compounds and an enzyme called alliinase that were stored separately. They react to form sulfenic acids, which another enzyme turns into a volatile gas called syn-propanethial-S-oxide. The gas drifts up into our eyes and irritates nerve endings in the cornea, so the tear glands release tears to wash the irritant away. Chilling the onion before cutting and using a sharp knife, which crushes fewer cells, reduces the tears.
