Why does a cut apple turn brown?
When you cut an apple, you break open many of its cells. Inside these cells are natural chemicals called polyphenols and an enzyme called polyphenol oxidase. As long as the apple is whole, they are kept apart, but cutting mixes them together and lets oxygen from the air in. The enzyme then helps oxygen react with the polyphenols, forming brown substances, much like rust forms on iron. That is why a few drops of lemon juice slow the browning — its acid and vitamin C hold back the enzyme — and why keeping cut pieces in cold water or a closed box, away from air, also helps.
